 saffron rose brioche donuts 🌹 1. In a stand mixer, add 4.5 cups all purpose flour, 1 egg, 2 tsp salt, 1/2 cup sugar, 2 tsp active dry yeast, 1 cup milk, 1/2 cup water. Mix on medium-low for 8 minutes. Then add 1 stick @tillamook butter. Mix for another 8 minutes. Add to a greased bowl. Cover. Let proof overnight (or 1.5 hour at room temp). 2. Turn down out, punch down. Roll into a 10x13 in” rectangle. Punch out 3” circles. Add to two parchment lined baking sheets that have been greased. Cover and let proof 1 hour in a warm spot. 3. Fry 4 donuts at a time in 350F vegetable oil, 2 minutes a side. Transfer to a wire rack. 4. Pastry cream. Whisk 1/2 cup cornstarch with 1 cup sugar in a medium pot. Then whisk in 3 cups milk, 9 egg yolks, 1 tsp salt, 2 tsp saffron. Whisk over medium-high heat until very thick. Dump into a bowl. Add 4 tbsp butter, 1 tsp @nielsenmassey rose extract. Cover and cool in fridge. Then fill donuts with the cream. 5. Glaze donuts with a thick powdered sugar icing that has some saffron added to it. Garnish w rose. green shakshuka pie 🍳 1. Roll out pie crust and fit into @greatjones quarter sheet pan. Fill w pie weights and par bake, then remove weights and continue to bake until golden. 2. Saute 36 oz baby spinach (in batches) until wilted. Transfer to a big bowl. Once cool press out as much water as you can. Then saute 2 leeks, 2 bunches of chopped parsley in 2 tbsp olive oil until tender. Dump in with spinach. Then stir in 2 beaten eggs. Season with salt, pepper, sumac. 3. Press into pie crust and bake for 15 minutes at 350F. Then either make 12 small wells for @happiergrocery quail eggs or 6 larger wells for regular eggs. Bake for another 10 minutes, until eggs are set. spring green risotto 💚 recipe below :) inspired by @wishbonekitchen 1. Bring 1 quart chicken stock and 2 cups water to a simmer. Drop in 1 package baby spinach and cook for 30 seconds. With a slotted spoon, transfer to a @vitamix blender. Add 1 jalapeño, 3 garlic, 1/2 lemon juice, 1 bunch parsley, 1/2 tsp salt. Blend until smooth. 2. In a large pan, add 2 tbsp olive oil. Heat over medium heat. Add in 1/2 chopped onion. Cook until tender. Then add 2 cups @lundbergfarms arborio rice. Cook for 3 minutes. Add 3/4 cup white wine. And then ladel in 1/4/-1/2 cup chicken stock into the risotto, stirring for about 15 minutes, adding more liquid once previous amount evaporates. 3. In a stand mixer add 480ml warm water, 1 tbsp active dry yeast, 2 tbsp honey, 600g all purpose flour, 100g whole wheat flour, 2.5 tsp kosher salt, 2 tbsp olive oil. Mix on medium-low speed for 10-12 minutes. Transfer to oiled bowl, cover with plastic and let proof in the fridge overnight. 2. Punch dough down. Turn out and divide into 12 100g pieces. Roll each into a ball. Cover and let rest 30 minutes. 3. Preheat oven to highest it’ll go with a @hexclad pizza steel/stone, or just a sheet if that’s all you have (550F is great). Take a ball. Roll to 6 inch circle. Repeat with 2 more. Transfer to the pizza steel quickly. Bake for 3-4 minutes, until puffed and starting to brown. Repeat with remaining pitas. pistachio date bark 🍫 1. Pit 25 soft dates. Grease a pieces of parchment. Lay dates on top. Smoosh with your fingers. Then top with another parchment. And use rolling pin to flatten completely. 2. Top with @eatpistakio crunchy pistachio butter or peanut butter to taste. Then top with 8oz melted dark chocolate. Chill then cut into pieces. green falafel 🧆 1. Soak @eatsimpli 12 oz dried chickpeas in water for at least 6 hours. 2. In a food processor, add 2 bunches cilantro, 5 scallions, 6 garlic cloves, 1 tbsp zaatar, 2 tsp kosher salt. Pulse to grind. Heat 115g heavy cream over medium until simmering, pour over 115g dark chocolate. Stir to form ganache. Let cool covered. Set aside. 4. Punch dough down. Divide into 10 balls. Let proof for 45 minutes covered. Bake at 375F for 30 minutes. 5. Slice tops off buns. Scoop some bread out. Fill with graham cracker butter and then ganache. 6. Then add 2 tbsp @tillamook butter and mix for another 5 minutes. Cover and let proof overnight. 2. Deflate dough and divide into 4 pieces. Roll each into a ball. Let rest for 15 min covered. 3. Roll each out into a long rectangle. Fold into thirds the long way. Then roll into a tight spiral. Add to a well-greased @usa_pan pullman pan or two regular loaf pans. Cover and let proof for 2 hours in a warm place. 4. Preheat oven to 425F. Add loaf to the oven. Decrease heat to 375F. Bake for 30 minutes. Cover with foil if darkening too much. Let cool. chicken katsu sando with nori cabbage slaw 🍗 1. Pound 8 boneless skinless chicken thighs to 1/3 inch thick. Season with salt. Dredge in flour, then egg beaten w a little water, then panko. In a stand mixer, add 4.5 cups all purpose flour, 1 egg, 2 tsp salt, 1/2 cup sugar, 2 tsp active dry yeast, 1 cup milk, 1/2 cup water. Mix on medium-low for 8 minutes. Then add 1 stick @tillamook butter. Mix for another 8 minutes. Add to a greased bowl. Cover. Let proof overnight (or 1.5 hour at room temp). 2. Turn down out, punch down. Roll into a 10x13 in” rectangle. Punch out 3” circles. Add to two parchment lined baking sheets that have been greased. Cover and let proof 1 hour in a warm spot. 3. Fry 4 donuts at a time in 350F vegetable oil, 2 minutes a side. Transfer to a wire rack. 4. Make pastry cream flavored w rose and saffron. 5. Glaze donuts with a thick powdered sugar icing that has some saffron added to it. fluffiest pita 🥙 full recipe is on my website, abridged recipe below :) 1. In a stand mixer add 480ml warm water, 1 tbsp active dry yeast, 2 tbsp honey, 600g all purpose flour, 100g whole wheat flour, 2.5 tsp kosher salt, 2 tbsp olive oil. Mix on medium-low speed for 10-12 minutes. Transfer to oiled bowl, cover with plastic and let proof in the fridge overnight. 2. Punch dough down. Turn out and divide into 12 100g pieces. Roll each into a ball. Cover and let rest 30 minutes. 3. Preheat oven to highest it’ll go with a @hexclad pizza steel/stone, or just a sheet if that’s all you have (550F is great). Take a ball. Roll to 6 inch circle. Repeat with 2 more. Transfer to the pizza steel quickly. Bake for 3-4 minutes, until puffed and starting to brown. Meanwhile boil 8 oz spaghetti until cooked. 3. Meanwhile meanwhile, whisk 2 egg yolks (@vitalfarms), 1 whole egg, and 1 cup pecorino. Drizzle in 1 cup pasta water. 4. Add spaghetti to the pan, then constantly whisk in the egg mixture, continue to cook over medium low until sauce thickens. Add 3.5 cups all purpose flour, 2 tbsp sugar, 1 tbsp + 1 tsp baking powder, 1/2 tsp baking soda, 1.5 tsp kosher salt, 1-2 tbsp ranch seasoning, 3 sliced scallions. Whisk. Then drop in 2 sticks @tillamook butter chilled, sliced unsalted butter. Toss. Then smash into the flour until butter pieces are the size of hazelnuts. 2. Drizzle in 1 1/4 cup buttermilk. Turn dough out. Press into a square. Divide into quarters, stack, and press down. Repeat again. Transfer to plastic wrap, press to 1” thick, and chill for 1 hour. 3. Divide into 9 pieces. Transfer to baking sheet. Brush tops with heavy cream. Bake at 400F for 25 minutes. buttermilk fried chicken with habanero hot honey 🍗 1. Add 2 cups buttermilk, 2 tbsp @zabs hot sauce, 6 rosemary sprigs, 4 tsp kosher salt to a large bowl and whisk. Add in 4 lbs. bone-in, skin-on chicken breasts, thighs, and/or drumsticks. Refrigerate overnight. 2. Add 3 cups flour, 1/4 cup cornstarch, 1 tsp salt, and whatever spices you like to a bowl and stir together. Toss in a few tbsp of the brine into the flour and mix around to create clumps. Then one piece at a time transfer chicken into the bowl and pack on the dredge. 3. Fry chicken in 350F oil 4-5 pieces at a time, until chicken is golden and registers 160F degrees. Season with flaky salt. Fry the rosemary too if you’d like. 4. Simmer 1 cup honey with 2 sliced habanero, 1 tbsp water for a couple minutes to infuse. Then serve w chicken. classic pickles 🥒 1. fresh pasta night 🍝 recipes below :) clam pasta with pistachio pesto 🦪 1. Wash 3-4 lbs. clams and set in a bowl of water to filter out grit. At least 30 minutes. 2. Blitz 1/4 cup @wonderfulpistachios roasted pistachios, 1 garlic clove, 1/2 cup grated parmesan cheese until ground. Add in 2 large bunches basil and blitz in. Then stream in 1/2 cup @californiaoliveranch olive oil. Set aside covered. 3. In a large pot (mine is @yesiamgoldilocks), saute 1/2 chopped lemon in 2 tbsp olive oil over medium-high heat. Start boiling 1 lb. Spaghetti. Drop in clams w/o water into the lemon pot. Cook for about 10 minutes until clams have opened. Transfer those to a large bowl. Then drop al dente pasta into clam juice. Add a lot of pesto and stir in. Taste to see if you need more. Transfer to a plate with clams on top. Garnish with more pesto and toasted breadcrumbs. fennel apple salad 🍎 1. Thinly slice 2 bulbs of fennel. Transfer to a bowl. Thinly slice 2 apples and also transfer to the bowl. 2. Mix 1 bunch finely chopped dill, 1tbsp dijon mustard, 1/4 cup olive oil, 1/3 cup apple cider vinegar, salt, pepper. 3. Dress salad to taste. Crush 4 cups rice Chex, then add 1/2 cup almond flour, 6 tbsp butter, 1/3 cup light brown sugar, 1 tsp kosher salt and stir. Press into an 8 or 9 inch tart pan. Bake at 350F for 10-15 minutes. Let cool slightly. 2. Meanwhile in a pot add 1/3 cup sugar, zest of a lemon, 4 egg yolks, 1 egg, 1/2 tsp kosher salt and whisk. Then add 3/4 cup lemon juice. Whisk over medium heat until thickened. Stir in 2 tbsp butter. Dump into tart crust. 3. Bake tart at 325F for 25-30 minutes, until filling is set and barely wobbles when you shake the pan. Let cool. 4. Whisk 2 cups sugar with 8 egg yolks over simmering water until white and hot. Whisk on a mixer until cool. Add to tart and torch. cauliflower gratin 🧈 1. Heat 1 cup cream with 4 tbsp butter over low heat to melt. Add 1 tsp fresh nutmeg, 2 tsp salt, black pepper. 2. Slice 2 large heads of cauliflower. Shred 12 oz gruyere. Then layer cauliflower, sliced scallions, gruyere in a large casserole. Dump in cream mixture. 3. Bake at 425F covered with foil for 30 minutes. Then uncover and let cook until deeply browned, cream has reduced, about 45-60 more minutes. fennel orange salad 🍊 1. Thinly slice 4 fennel bulbs on a mandolin. Supreme 8 oranges. 2. In a container add the juice and zest of 1 orange and 1 lemon. Also add 1 tbsp dijon, 1 tsp salt, 2 tbsp apple cider vinegar, 1/2 cup olive oil. Shake to emulsify. 3. Dress fennel to taste.
