Healthy Peanut Butter & Chocolate Magnums 🍌🥜 Ever meal prepped an ice lolly snack? Stop what you’re doing and make these! If you don’t like banana swap for other fruit! Serves 4 Ingredients: - 2 bananas - 150g Greek yogurt - 1-2 tbsp peanut butter - 50ml milk - 150g dark chocolate - 1 tsp coconut oil (Optional) Method: 1. In a blender, mix your banana, peanut butter, yoghurt and milk (this should make a nice smooth liquid) 2. Pour the mixture into your lolly moulds (I just got these on Amazon link in my storefront) pop them into the freezer for 3-4 hours 3. After 3-4 hours, melt your dark chocolate with a teaspoon of coconut oil and pour into a mug/cup of choice. Grab your lolly mould from the freezer and dip the lollies into the chocolate until they are fully covered 4. Set the lollies on a tray with greaseproof paper so they don’t stick and freeze for another 30 mins. Hopefully you can wait the 30 minutes! Air Fryer Crispy Potato Salad 🥔 Any salad is made better with potato... and in my opinion this is the salad of the Summer. It’s crispy, creamy and the lemon juice gives it that Summer feel. Ingredients - 750g baby potatoes - 200g bacon lardons (can be pre-cooked bacon) - 2 tbsp olive oil - 5 tbsp Greek yoghurt - 2 tbsp light mayo - 1 tsp Dijon mustard - Juice of ½ lemon - Salt and pepper - Garlic (optional) - Chives - Parsley Method: 1. Boil your baby potatoes for 30 minutes (or until tender) 2. Line your air fryer with some parchment paper and set your boiled baby potatoes on top. Take a pint glass and crush the potatoes so they are flat and sprinkle with salt, pepper and plenty of olive oil. 3. Air fry the potatoes for 25 minutes at 200 until nice and crispy 4. While the potatoes are cooking, prepare your dressing by mixing Greek yoghurt, light mayo, lemon juice, Dijon mustard, garlic (optional), cooked bacon, parsley, chives and some salt and pepper 5. Once the potatoes are cooked, let them cool for 5 minutes and chop them into quarter pieces and pop them into the dressing. Give it a good stir and serve with some chive on top. Super Easy Smoothie Bowls 🍓🍌 AD All I'm seeing over social media lately is people using the @Ninja UK Creami and to be honest, I get the hype. I'm a bit addicted to making these breakfast smoothie bowls using up some leftover fruit I had in the fridge. This was so easy to make and it's such a lovely breakfast or brunch. Feel free to customise using whatever fruit you like, or even use acai! Ingredients: Handful of strawberries Handful of raspberries Handful of blueberries 2 tbsp Greek yogurt (0% fat) 100ml semi-skimmed milk 1 tbsp honey (feel free to add more if you like) Serve with: Airfryer granola (recipe on my website) 1 tsp chia seeds 1 strawberry, sliced 1 banana, sliced 1 tbsp peanut butter 1 cube dark chocolate, grated Method: Add all of the ingredients for your smoothie bowl into the Ninja Creami pot, making sure not to pass the max fill line. Mash everything together using a fork or masher. Add the pot to the freezer making sure you aren't freezing at an angle and freeze for 24 hours. Once ready, add the pot to the Ninja Creami machine, and select your mode. I used the 'full' and 'frozen yoghurt' setting. After the 4 minutes, I like to re-spin for extra creaminess. Makes 2 double cheeseburgers 590 calories per burger For the smash burgers: - 500g lean beef mince - 1 tsp garlic granules - 1 tsp onion granules - Salt and pepper - 2 slices of cheese - 2 brioche buns - Low fat mayo (Optional) For the French onion dip: 75g butter 1 white onion sliced 1 tsp garlic puree 1 tsp dried thyme 1 tbsp Worcestershire sauce 170ml beef stock Gravy granules, to thicken Method: 1. Heat a little butter in a pan over medium-high heat. 2. Add the chopped onion and cook for about 10 minutes until browned. 3. Slowcooker Irish Savoury Mince & Carrots 🥕 Serves 6 This is a childhood classic for me, my granda always made this and the only way to have it is with mash and peas. It feels a bit like a deconstructed cottage pie, and I love it. All the nostalgia with none of the hard work. Ingredients: - 600g lean beef mince - 4 carrots, peeled and cut into small cubes or chunks - 1 rich beef stock pot - 4 tbsp Worcestershire sauce - 4 tbsp tomato purée - 4 garlic cloves, crushed - 1 onion - optional Method: 1. You can brown the mince in a frying pan with 1 tablespoon of oil over a high heat, but it’s not essential. If you don’t brown it, cut it up with scissors so it doesn’t clump. 2. Add the mince and all the other ingredients to the slow cooker, season with salt and pepper and add 450ml of boiling water. Cook on high for 3–4 hours or low for 7–8 hours. 3. If you want a thick sauce, add 2 tablespoons of cornflour mixed with 2 tablespoons of water, or some gravy granules. I prefer gravy granules or powder. 4.
