Ingredients: - Boneless, skinless chicken thighs - Cream cheese (softened) - Shredded cheddar cheese - Jalapeños (halved and deseeded) - Bacon strips - Heath Riles Sweet BBQ Rub - Heath Riles Chicken Rub - Heath Riles Sweet BBQ Sauce Directions: 1. Preheat the grill to 350℉ (Heath used a @Traeger Grills Ironwood XL with @Royal Oak Charcoal Hardwood Pellets). 2. Trim the chicken thighs and pound them flat using a mallet for easy rolling. 3. Mix the filling: Combine softened cream cheese and cheddar cheese, then season with Sweet BBQ Rub. 4. Stuff the jalapeños with the cream cheese mixture. 5. Assemble the bombs: Place a stuffed jalapeño on each flattened thigh, sprinkle with more Sweet BBQ Rub, roll it up jelly-roll style, and wrap in bacon. 6. Season generously on all sides with Sweet BBQ Rub and Chicken Rub. 7. Grill for 50 minutes, then glaze with Sweet BBQ Sauce. Cook for another 15–20 minutes until internal temp hits 170℉. 8. Prep the Chicken: - Split whole chickens in half. - Use olive oil as a binder on both sides. - Season generously with Chicken Rub and Garlic Jalapeño Rub. - Let the seasoning sweat in while the grill heats up. 2. Set Up the Grill: - Preheat @Weber Grills to 350°F, using @Royal Oak Charcoal for clean, consistent heat. - Set up for indirect cooking. 3.
