Easiest Sourdough Bread (Half-Time Baking Method) Ingredients: • 175g bread flour • 175g pastry (or baklava) flour • 260g water (add gradually) • 100g sourdough starter • 7g salt Preparation: 1. Mix flour and water until no dry spots remain. Let rest for 1 hour. 2. Add sourdough starter and knead for 4–5 minutes until fully combined. Rest 30 minutes. 3. Add salt and knead for another 5 minutes. 4. Perform 4 sets of stretch & folds, every 30 minutes. Let dough rise until it increases by 50%. 5. Shape the dough, coat with sesame seeds, and place into a basket. 6. Let it rest 30 minutes at room temperature, then refrigerate for cold fermentation. 7. After 13–14 hours, remove from fridge, score the top, and bake. 8. Bake in a preheated oven at 230°C (with steam) for 20–25 minutes. EASY CIABATTA BREAD Ingredients: • 400 g high-protein white bread flour (about 3.5–4 cups) • 350 g water (about 1.5–2 cups) • 35 g olive oil (about 1/4 tea glass or ~2.5 tbsp) • 8 g instant dry yeast (1 tbsp) • 8 g salt (1 tsp) Instructions: 1. Mix all ingredients together at once until the dough is fully combined and smooth. Let it rest for 30 minutes. 2. Wet your hands and do the first fold like shown in the video. 3. Do 2–3 more folds, every 15–20 minutes, using the second folding method in the video. Then let the dough rise. • (If the dough spreads too much, fold it sooner instead of waiting). 4. Transfer the dough onto a well-floured surface, flour the top as well, then cut into your desired sizes. 5. Place onto a baking tray lined with parchment paper and let it rest for 20 minutes (tray proof). 6. Bake in a preheated oven at 230°C (450°F) for 15 minutes with steam. • (To create steam: Place a bowl of hot water in the oven while it preheats and leave it during baking. Mixing: Mix the flours, water, and sourdough starter until no dry spots remain. Let the mixture rest for 40 minutes. 2. Salting & Kneading: Dissolve the salt in a little water and add it to the dough. Knead for 3–4 minutes until well combined. 3. Folding: As the dough spreads, fold it 4 times every 30 minutes. 4. Shaping & Proofing: When the dough has increased by 50% in volume, shape it, coat with sesame seeds, and place it in a basket. Let it rest at room temperature for 30–40 minutes, then refrigerate for cold fermentation. 5. Baking: After 12–18 hours, remove the dough from the fridge.
